The SloRoller is a low-and-slow tool only. Kamado Joe specifies a 150 to 300°F working range for the insert and states that running it above 300°F can damage it. Take the SloRoller out before you roast hot, bake pizza, or sear. The grill is rated to 750°F; the insert is not.

When you load all three Divide and Conquer tiers you do get more usable surface, but comparing a stacked total against another brand's single-grate number is not a like-for-like comparison.

Can I use it as a pizza oven?
