The BBQ23SS is the right call if the BBQ03SS feels too small for the way you cook but the BBQ26SS is more grill than your space or budget allows. You get the full XL main grate, dual height-adjustable cooking surfaces, and the same brasero firebox build quality as the larger units — in a footprint that still fits a standard patio. Main Santa Maria Grate (34" x 26.5") — Your primary cooking surface and one of the largest single grates in the Tagwood range. The wheel-crank elevation system raises and lowers the grate up to approximately 20 inches above the coal bed — that's a serious range of motion. Drop it low for direct-heat searing on ribeyes, picanha, and tomahawks. Raise it up for slow indirect cooks on whole chickens, racks of ribs, and brisket. Park it mid-height to hold steady temperatures across multi-hour cook sessions. This is heat control by distance — the way Argentine asadores have done it for over a century.
Height-Adjustable Secondary Grate (9" x 24") — Sits above the firebox and adjusts independently from the main grate. This is what makes the BBQ23SS a true two-zone grill: you can run proteins on the main grate at one temperature while toasting bread, warming tortillas, finishing vegetables, or holding sides on the secondary grate at a completely different temperature — at the same time. No relay between grills, no juggling charcoal piles.
Interchangeable Flat Griddle — Swaps in for flat-surface cooking when you need it. Smash burgers, chorizo, peppers and onions, breakfast service, anything that needs a flat searing surface instead of an open grate. Pull it off when you want the open-fire real estate back.
S-Shape Meat Hooks for Vertical Hanging — For traditional Argentine-style slow-roasting. Hang ribs, sausages, or whole cuts above the fire for the kind of indirect, fat-rendering cook that no flat grate can replicate. Hooks operate alongside the grate surfaces — hang sausages above while steaks sear below.
This is what separates a Santa Maria grill from every other live-fire setup. Instead of adjusting your fire to control temperature, you adjust the distance between your food and the fire by turning a hand wheel. Lower the grate for searing. Raise it for slow cooking. Park it mid-height for everything in between. Your hands never go near the coals, and you can change cooking temperatures in seconds without disturbing your fuel bed.
With approximately 20 inches of vertical adjustment on the main grate, the BBQ23SS gives you one of the widest temperature ranges available on a Santa Maria grill at this size.
The brasero-style firebox is lined with firebricks along the bottom and interior walls. The firebricks do three things: they buffer heat transfer to the steel panels (extending the working life of the firebox), they radiate heat back into the cooking chamber more evenly, and they let you burn longer with less fuel because heat is retained in the brick mass rather than escaping through the steel.
The firebox burns both hardwood and charcoal — run pure lump for clean high-heat searing, run oak or hickory splits for traditional Argentine asado flavor, or combine both. A front-access door lets you load fuel and manage ash mid-cook without lifting the cooking grates. A water drain at the base keeps moisture from pooling inside the firebox during outdoor storage.
The entire BBQ23SS is manufactured from 304 stainless steel — frame, grates, firebox, side table, and accessories. 304 is the same grade used in commercial kitchens and outdoor marine applications because it resists corrosion, cleans easily, and holds up to decades of use. Four heavy-duty 6-inch swivel casters (two with locking brakes) let you move 485 pounds of grill across a patio, lock it in position for service, and reposition for cleaning. A fold-down side table gives you prep and plating space when you need it and folds away when you don't. A front handle, built-in bottle opener, fire shovel, and poker round out the package.
