Santa Maria cooking, set into stone
The BBQ05SS is the built-in version of Tagwood's original Santa Maria layout: brasero, wheel-adjustable main grate and hanging hooks in a 304 stainless steel body made to drop into a custom island or masonry surround. Compact at 48.5" wide, with three cooking surfaces.
01 · Built-in installation
Designed for your build
At 34" high, 48.5" wide and 19.75" deep, the BBQ05SS fits a wide range of islands and masonry surrounds. Tagwood's installation guide calls for a level, heat-resistant base lined with firebricks, with a centered drain hole for the grill's drainage system. The updated front access door has exterior bolts and a non-flush design.
02 · Brasero and firebricks
Embers on demand
Wood or charcoal lights quickly in the brasero, which keeps the fire beside the grate rather than under the food. Pull embers across as you need them. The firebricks are rated to 2,870°F; they spread heat evenly and protect the body.
03 · Elevation system
Height is your thermostat
The 33.75" x 16.5" main grate travels from 2.75" to 20.5" above the coals. Lower it to sear, raise it to slow down, all with one wheel.
Elevation system: Right side vs Frontal
Both layouts raise and lower the same grate through the same range. Tagwood does not publish a separate clearance figure for the wheel; its installation guide asks you to allow sufficient clearance for crank wheel movement, so plan open space where the wheel sits and follow the BBQ05SS installation guide.
04 · Round or V-shape grates
Choose how your grate cooks
Round main grates work with the interchangeable griddle, so you can swap part of the grate for a flat surface. V-shape grates have angled bars that channel grease away to a collector box for a cleaner grill; they do not take the griddle. Tagwood treats it as a matter of preference: both grill beautifully.
05 · Hanging hooks
The asado hangs above
Stainless S-hooks on the upper bar hang chorizo, ribs and peppers in the rising heat while steaks cook on the grate below, so one fire works for the whole meal.
