The BBQ05SS and BBQ03SS share the same core cooking platform: same 304 stainless steel construction, same Santa Maria elevation system, same firebrick-lined firebox, same main grate dimensions. The difference is in how they're installed:
Choose the BBQ05SS if you're designing or have already built an outdoor kitchen and want a true live-fire Santa Maria as the centerpiece. Choose the BBQ03SS if you want the same cooking experience without committing to a custom build.
Main Santa Maria Grate (33.75" x 16.5") — Your primary cooking surface. The wheel-crank elevation system raises and lowers the grate from 2.75" up to 20.5" above the coal bed — that's a 17.75-inch range of vertical adjustment. Drop it down low to sear ribeyes, picanha, and tomahawks at high heat. Raise it up high for slow-cooked whole chickens, racks of ribs, and indirect cooks. This is heat control by distance — the way Argentine asadores have done it for over a century.
Interchangeable Flat Griddle — Swaps in for flat-surface cooking when round grates are mounted. Smash burgers, chorizo, peppers and onions, breakfast service, anything that needs a flat searing surface instead of an open grate. Pull it off when you want the open-fire real estate back.
S-Shape and Extended S-Shape Meat Hooks — For traditional Argentine-style vertical hanging and slow-roasting. Hang ribs, sausages, or whole cuts above the fire for the kind of indirect, fat-rendering cook that no flat grate can replicate. The extended hooks accommodate larger cuts that won't fit on standard hooks.
The BBQ05SS supports both round main grates (included) and V-shape grates (sold separately as the BBQ79SS). V-shape grates channel rendered fat away from the food and the fire, reducing flare-ups during high-fat cooks like ribeyes and pork chops. Switch between the two depending on your cook — round for traditional grilling, V-shape for fattier cuts where flare-up control matters.
This is what separates a Santa Maria grill from every other live-fire setup. Instead of adjusting your fire to control temperature, you adjust the distance between your food and the fire by turning a hand wheel. Lower the grate for searing. Raise it for slow cooking. Park it mid-height for everything in between. Your hands never go near the coals, and you can change cooking temperatures in seconds without disturbing your fuel bed.
With 17.75 inches of vertical travel on the main grate (from a 2.75" minimum to a 20.5" maximum), the BBQ05SS gives you exceptional temperature range — drop the grate close enough to sear at extreme heat, raise it high enough to slow-cook a brisket without ever touching the fire.
The BBQ05SS is available with two elevation configurations: right-side standard (the traditional Tagwood mounting) or frontal elevation (wheel mounted on the front for installations where right-side access is restricted by cabinetry). Frontal elevation available on pre-order — choose at checkout.
The gaucho-style firebox is lined with firebricks along the bottom and side walls. The firebricks do three things: they buffer heat transfer to the steel structure (extending the working life of the firebox), they radiate heat back into the cooking chamber more evenly, and they let you burn longer with less fuel because heat is retained in the brick mass rather than escaping through the steel.
The firebox burns both hardwood and charcoal — run pure lump for clean high-heat searing, run oak or hickory splits for traditional Argentine asado flavor, or combine both. A front-access door with handle lets you load fuel mid-cook without lifting the cooking grate. A built-in drain system keeps moisture from pooling inside the firebox during outdoor exposure — critical for a built-in unit that won't be moving indoors for the off-season.
