The BBQ03SI and BBQ03SS share the same core cooking platform: same wheel-crank Santa Maria elevation system, same firebrick-lined firebox, same four cooking zones, same 304 stainless steel grates, griddle, and hooks. The difference is in the frame:
Choose the BBQ03SI if you want the all-black Chief Series look and you're comfortable doing occasional light sanding and high-temp paint touch-ups to keep the frame in top shape. Choose the BBQ03SS if you want zero-maintenance stainless throughout.
Main Santa Maria Grates — Your primary cooking surface. The wheel-crank elevation system raises and lowers the grates from 2.5" up to 16" above the coal bed. Drop them down low to sear ribeyes, picanha, and tomahawks at high heat. Raise them up high for slow-cooked whole chickens, racks of ribs, and indirect cooks. Park them mid-height to hold steady temperatures across multi-hour cook sessions. This is heat control by distance — the way Argentine asadores have done it for over a century.
Secondary Grate Over Firebox — Sits above the firebox for a separate cooking zone with its own heat profile. Run proteins on the main grates while toasting bread, finishing vegetables, or holding sides on the secondary grate at the same time. Two zones, one fuel bed.
Interchangeable Flat Griddle — Swaps in for flat-surface cooking when round grates are mounted. Smash burgers, chorizo, peppers and onions, breakfast service, anything that needs a flat searing surface instead of an open grate. Pull it off when you want the open-fire real estate back.
S-Shape Meat Hooks — For traditional Argentine-style vertical hanging and slow-roasting. Hang ribs, sausages, or whole cuts above the fire for the kind of indirect, fat-rendering cook that no flat grate can replicate. Hooks operate alongside the grate surfaces — hang sausages above while steaks sear below.
This is what separates a Santa Maria grill from every other live-fire setup. Instead of adjusting your fire to control temperature, you adjust the distance between your food and the fire by turning a hand wheel. Lower the grates for searing. Raise them for slow cooking. Park them mid-height for everything in between. Your hands never go near the coals, and you can change cooking temperatures in seconds without disturbing your fuel bed.
With 13.5 inches of vertical travel on the main grates (from a 2.5" minimum to a 16" maximum), the BBQ03SI gives you a meaningful temperature range — drop the grates close enough to sear at extreme heat, raise them high enough to slow-cook whole chickens or roasts.
The BBQ03SI's frame is built from 1/8" thick cold-rolled steel — substantially heavier than the gauge used on most competitor freestanding grills at this price point. The frame is finished in heat-resistant black paint that gives the unit its distinctive Chief Series aesthetic. Combined with the 304 stainless steel cooking components, you get a grill that's built to perform season after season.
The gaucho-style firebox is lined with firebricks along the bottom and side walls. The firebricks do three things: they buffer heat transfer to the steel frame (extending the working life of the firebox), they radiate heat back into the cooking chamber more evenly, and they let you burn longer with less fuel because heat is retained in the brick mass rather than escaping through the steel.
The firebox burns both hardwood and charcoal — Tagwood recommends lump charcoal and firewood for the best ember production and cleanest cooking experience. Coals drop down as they're ready for grilling, keeping the flame away from the food. A water drainage system at the base prevents moisture from pooling inside the firebox during outdoor storage.
Every surface that touches food on the BBQ03SI is made from 304 stainless steel — the main grates, the secondary grates, the interchangeable griddle, the meat hooks, and the included shovel and poker. 304 is the same restaurant-grade material used in commercial kitchens because it resists corrosion, cleans easily, and holds up to direct fire exposure. The cooking performance and food safety profile of the BBQ03SI are identical to the all-stainless BBQ03SS.
Four heavy-duty 6" swivel casters let you reposition the grill across a patio, lock it in position for service, and roll it into a covered storage spot when not in use. A side table provides prep and plating workspace, and a built-in bottle opener and integrated tool hook holes keep your shovel, poker, and accessories within arm's reach during a cook. The front door adds extra safety during fuel loading and ash management.
The BBQ03SI's frame is built from cold-rolled steel, which — like all grills made from this material — is prone to rusting over time, especially in the firebox and other high-heat areas. This is more common in regions with high humidity.
